Best Pasta with Cauliflower and Garlic

1 head of garlic
3 tablespoons of olive oil
1 large cauliflower, cut into florets
black pepper to taste
500 g of your favorite short pasta
3 tablespoons grated Parmesan cheese
Juice of 1/2 lemon
Method of preparation
Preheat the oven to 180°C.
Cut approximately 1 ⁄ 4 off the top of the garlic head so that the cloves are exposed.
Then drizzle with 1 teaspoon of olive oil and sprinkle with a pinch of salt. Wrap the garlic head in aluminum foil and then place in the oven to roast, for approximately 50 minutes.
When it is cool enough, remove the garlic pulp with the help of a spoon.
In a large roasting pan, toss the cauliflower with 1 tablespoon of the oil, salt, pepper and half the roasted garlic.
Bake in the oven until golden and the bottom starts to get crispy, about 30 minutes.
Meanwhile, cook the pasta according to package directions until al dente. Drain the pasta, but reserve ½ cup of the cooking water.
In the same pan in which the pasta was cooked, add the rest of the garlic, the reserved pasta water and the grated Parmesan cheese.
Stir to melt the cheese and evenly distribute the garlic.
Add the pasta, the remaining 2 tablespoons of oil, the lemon juice, then season with more salt and pepper if desired.
Finally, add the roasted cauliflower and serve immediately.
