Like all dumplings, this rice and cheese dumpling contains flour and is deep-fried. But the special thing about these dumplings is that, as they have rice, cheese and carrots, they are very light and crunchy. In addition, they are very easy to make and allow you to use the rice left over from the day before, making it a very economical recipe. You can serve as a starter, entrance or accompaniment. 1 cup of cooked rice

1 grated raw carrot

frying oil

1 cup grated cheese

nutmeg and black pepper to taste

1 spoon of chopped parsley

4 eggs

1 cup self-rising wheat flour

Method of preparation

First, in a bowl, mix the cup of cooked rice with the finely grated raw carrot, the grated cheese and the parsley.

Then season with salt, black pepper and nutmeg, mixing well.

If you don't have leftovers, you can make the rice balls by cooking half a cup of rice tea at this point, in the usual way.

Tip: You can replace the carrot with any chopped vegetable. For example, you can make rice balls and spinach.

Add the eggs one at a time and then mix well.

If you prefer to bake the rice balls in the oven, you will have to use 3 eggs.

Then add the wheat flour and mix well, until you get a dough that can be dripped with a spoon to fry.

Put enough oil to fry in a pan and heat it well.

Pour spoonfuls of dough to fry the rice and cheese balls. The dumplings should be golden brown on both sides, so when they are golden on one side, carefully flip them over to brown the other side.

Tip: You can also cook the rice balls in the oven, placing the portions on a tray lined with parchment paper and baking at 180ºC for 10-15 minutes.

When removing them from the oil, place them on absorbent paper to remove excess oil.
