For lunch or dinner any day of the week, prepare this chicken and pumpkin burger for the whole family. It's a delicious recipe to taste: a juicy, light and healthy hamburger, whether you serve it on the grill or mount it with bread, cheese, lettuce… Then check out the recipe.
Ingredients for 4 people
600 g of clean chicken breast
240 g roasted or boiled pumpkin
2 garlic cloves
¼ cup chopped chives
1 thick slice of fresh ginger
4 sprigs of fresh coriander
black pepper to taste
½ teaspoon smoked paprika
salt to taste
extra virgin olive oil as needed
Method of preparation
First, roughly chop the chicken breasts and place them in the food processor.
Then add the roasted pumpkin also chopped. If you don't have cooked pumpkin, you can do it in seven or eight minutes in the microwave, cut into cubes and in a microwave-safe container.
Peel the garlic and cut it into two or three pieces, peel the onion and chop it too.
Chop the ginger, wash the coriander and then, after draining well, add them to the container with the chicken and pumpkin.
Finally, season with freshly ground black pepper, smoked paprika and salt.
Process until the chicken meat is finely chopped and mix with the rest of the ingredients.
Then take four portions and form the hamburgers; if you do it by hand, moisten them a little with water so they don't stick.
It's very easy, just make a ball and then flatten it.
Cook the burgers on a nonstick grill or skillet with a little extra virgin olive oil until golden brown.
In the meantime, prepare a side salad with your favorite ingredients.
